Spiced Holiday Cheer

 10 - whole cloves
 4 - pieces crystallized ginger; chopped. (or grated ginger-root)
 4 - 3” cinnamon sticks
 1 - gallon apple cider
 4 - cups pineapple juice
 2 - cups orange juice
 ¼ - cup fresh lemon juice
 1/3 - cup sugar
 ¼ - tsp salt **Optional: White rum.


 Combine all but the first two ingredients (cloves and ginger) in a pot. Empty a tea bag of its contents. Put the ginger and cloves in the emptied tea bag, then reseal with string and place in the pot with the other ingredients. Bring to a boil. Reduce heat and simmer 20 minutes.  Yields 22 cups.
