Crawfish Cornbread
 
1 med. onion, finely chopped 
½ c. finely chopped green pepper
1-2 jalapenos, finely chopped
1 pkg. Cornbread mix 
1 can cream style corn
1 ½ c. shredded cheddar cheese
 1 c. cooked crawfish tail

In a skillet, sauté onion and green pepper in oil until tender. Stir in jalapenos, set aside. In a bowl prepare cornbread as directed on box. Stir in cheese, corn, crawfish and jalapenos mixture. Pour into greased 13" by 9" pan Bake at 300° for 35-40 minutes.
