Strawberry Bread  

• 3 c. flour
• 2 c. sugar
• 1 tsp baking soda
• 1 tsp cinnamon
• 1 tsp salt
• 1 c chopped pecans (optional)
• 2- 10oz pkgs frozen strawberries (thawed)
• 1 cup oil
• 4 eggs, well beaten

Reserve 1/4 c strawberry juice when thawed. Combine all dry ingredients and mix well. Make a well in the center of dry ingredients and add all liquid ingredients. Mix by hand. Bake at 350° for approx. 1 hour. This can be frozen.
