Cranberry Pumpkin Bread
3-1/2 c. flour
1 2/3 c. sugar
2 teaspoon Baking soda
2 teaspoon. Pumpkin pie spice
3/4 teaspoon. Salt
1 teaspoon. Baking powder
16 oz. can whole berry cranberry sauce
16 oz. can solid pack pumpkin
1 c. chopped pecans
2/3 cup olive (or vegetable) oil
4 eggs
In large bowl, nix together flour, sugar, baking soda, spice, salt and
baking powder. In another bowl, mix together remaining bread ingredients.
Add pumpkin mixture to flour mixture and stir well. Pour batter into
(2) 9x5” greased loaf pans. Bake at 350 for 65 minutes or until
test done with wooden toothpick. Cool in pans 10 minutes then remove
to cooling rack. Cool completely.
Glaze
1 cup powdered sugar
1/4 cup orange juice concentrate
1/4 teaspoon cinnamon
Mix glaze ingredients together. Drizzle over cooled breads.
