Mango Roll
1 1/2 c. flour
1 Tblsp baking powder
1 c butter or margarine
1 1/2 c sugar
8 eggs
2 tsp vanilla extract
1 lime rind grated
Preheat oven to 400º F.
Beat butter, sugar, egg yolks, flour and baking powder. Add the lime rind and vanilla. Set aside.
In another bowl, beat the egg whites until it forms peaks, and mix into the other batter with a spatula or spoon until it is well mixed. Pour on the cookie sheet lined with wax paper.
Bake at 400º F for 10 to 12 minutes.
Prepare another wax paper to turn it over when it is done. Roll it and let it cool wrapped.
Filling
3 large Mangos
2 8oz cream cheese softened
1 c confectioners sugar
1 c sour cream
Filling can be made the day before.
Puree 2 mangos in the blender.
Beat the cream cheese, sugar, sour cream, and pureed mango.
Unwrap the cake and fill the inside with the cream. Roll it back; decorate the top with the leftover cream and the other mango that has been cut in cubes. Put it in the refrigerator until it is ready to serve.
