Chiffon Cake


3 1/3 c +2 Tbls cake flour 
1 ¾ c sugar
1 ½ tsp baking powder  
1 tsp salt
11 egg yolks
¾ c oil
1c + 2 Tbls cold water
1 ½ tsp vanilla
10 egg whites
¾ tsp cream of tartar
½ c sugar

  Mix cake ingredients together.  Beat egg whites, sugar, and cream of tartar. Gently fold egg whites into mixture. Line pan with parchment. Spread batter on parchment pan about ½” thick. Level with spatula.  Drop pan on countertop to get the air bubbles out. Bake at 350° for 8-10 min. Watch carefully. Very light and soft, not brown when done. Cool. This recipe makes 3-11x15 pans.
