The Houston Cake Club

 

 

 

Carrot Cake (with Pineapple)
 
2 c. Flour
2 tsp baking powder
1 ½ tsp baking soda
1 tsp. Salt
2 tsp. Cinnamon
1 ½ c. cooking oil
2 c sugar
4 eggs
2 c grated carrots
1 sm can crushed pineapple
¾ c chopped nuts
 
Sift all dry ingredients together and set aside. Mix oil, sugar, and eggs, beating after each addition. Add dry ingredients. Mix well. Add carrots, pineapple, and nuts. Grease and flour two 13x9x2 ½ pans. Bake 30-35 minutes at 325. Cool.
