Pumpkin
Bars
Each bite of thee heavenly soft, mildly flavored, frosted bars will
make your mouth water for more.
- 2 ¼ c all purpose flour
- 1 can (16 oz) pumpkin
- 2 c sugar
- ¾ c vegetable oil
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp baking soda
- 4 eggs
- ½ tsp salt
- ½ tsp nutmeg
- ½ tsp cloves and nutmeg (or mace)
- chopped pecans
Preheat oven to 350° . Grease 15x10x1 inch jelly roll pan. Combine
all dry ingredients in large bowl. Add pumpkin, oil and eggs and mix
until smooth. Pour batter into prepared pan. Bake 25 to 30 minutes or
until toothpick inserted in center comes out clean. Cool on wire rack.
Frost with cream Cheese Frosting. Cut into bars and garnish with chopped
pecans, nutmeg or mace. Makes about 40 1½ x 2½ inch bars.
Cream Cheese Frosting
- 6 Tblsp butter
- 1 ¾ c sifted powder sugar
- 1 - 3 oz pkg cream cheese softened
- 1 tsp vanilla
- 1 Tblsp milk or orange juice
Cream butter and cream cheese until smooth. Add milk or juice and
vanilla and mix well. Add sugar and beat until light and fluffy.
